What else is there to do on a snow day other than bake some healthy treats! My fiancé and I have a deal. He shovels and I bake. I think it’s a win-win. This snowstorm was named bomb-cyclone. What a name, right?! It just makes me want to stay in and cozy up with a nice cup of tea and par-take in my favorite home-y activities.
I was recently asked to come up with a recipe without grains and nuts. Allergies can make it tough to find a healthy good treat. Well, this is why this cookie was born!
So simple to make and really delicious. Each cookie has only 3g of sugar! The banana keeps it moist, as baking with coconut flour can be quite tricky. This took me a few tries, so I am hoping you will enjoy this recipe! I do!
Enjoy these cookies with a cup of coconut milk for dunking or on its own.

Coconut Chia Banana Pancakes

About last night….
I prepared these coconut chia banana pancakes…
totally on a whim, made up my own recipe, and it came out amazingly perfect.
My best recipes are the ones unplanned!
I just picture in my mind what I want the final outcome to taste and look like, and just go for it.
Unfortunately this dish was messy, but whatever! It all goes down the same gullet.
This dish is Gluten-Free, Grain-Free, Dairy-Free, Nut-Free, and Vegan.
Ingredients:
4 large eggs
1/4 cup cassava flour
1 large banana
3 Tbsp chia seeds
4 Tbsp coconut flour
1 Tbsp maple syrup
1 tsp vanilla extract
1 tsp melted coconut oil
1 tsp ground cinnamon
1/2 tsp baking powder
Kale, Carrot, and Banana Tigernut Muffins

Kristen and I had so much fun baking these muffins together! We wanted to bake a muffin that was both nutritious and delicious at the same time. We thought to add some greens, just enough to nourish the body with vitamins and minerals as well as add fiber, and added banana to give it a sweet touch. It came out perfectly! Just as we imagined, but with a little more fun! Our muffins and recipes are always made with love.
These muffins are dairy free, gluten free, and nut-free.
Plantain Banana Peanut Butter Bread

I asked one of my friends to pick up bananas at the store so we can bake some banana bread.
She came back with about 10 plantains.
I hysterically laughed.
She honestly believed she bought bananas.
We fell to the floor laughing for about 10 minutes.
Once that was done, we questioned what the heck we were going to do with all of these plantains?!
Well, here we go!
This is where Plantain Banana Peanut Butter Bread was born!
So, just to clear the air… I haven’t prepared plantains in about 15 years!
So this was a challenge.
A challenge I was ready to take because I always LOVE a good challenge.
This bread is amazing.
Ingredients:
2 ripe plantains, yellow with black spots
2 very ripe bananas
1 cup PB2 powder
1/2 cup coconut flour
1/4 cup cassava flour
3 T melted coconut oil
2 Tbsp honey (if vegan, use maple syrup)
1 Tbsp vanilla extract
1 tsp ground cinnamon
3/4 tsp baking soda

A couple of years ago, we lost a dear friend to Lung Cancer.
A healthy happy woman, who was not a smoker.
She simply was an amazing individual.
She taught me to be grateful and patient.
She holds a special place in my heart, always.
I miss our 5:30am talk sessions before class.
She was purely beautiful inside and out.
