Roasted Vegetable Pesto Wrap

Looking for a delicious and easy lunch or dinner wrap? Try this one! This wrap is filled with nutritious roasted veggies and mesclun greens. The wrap is an Ezekiel wrap by Food For Life. This is a sprouted grain wrap with more fiber and protein than most other wraps. The sprouted grains make it much easier on digestion. Ezekiel wraps can be found in the frozen section of your local grocery store. This is because the wraps do not contain any preservatives.
This dish is full of different colors, offering many different vitamins and minerals from each ingredient.
These vegetables wraps are really easy to make, and have such great taste!

Ingredients:
Ezekiel Wraps by Food For Life
1 graffiti eggplant, 3 slices, cut vertically
2 bell peppers, sliced vertically
1 red onion, sliced horizontally to make rings
1-2 handfuls Mesclun mixed greens
2-3 T pesto (I used Bear Pond Farm)
Cooking spray (I use avocado oil spray)
Salt and black pepper, to taste
Garlic Powder, to taste

Directions:
1. Preheat oven to 425°F.
2. Wash all fresh produce and cut accordingly (as per notes above).
3. Place eggplant, peppers, and onion on parchment paper over a baking sheet.
4. In a small bowl, mix avocado oil, salt, garlic powder, and black pepper.
5. Spray vegetables with cooking oil and sprinkle with salt, black pepper, and garlic powder. You can add whatever seasonings you like!
6. Place vegetables in oven for 25-30 minutes, or until crispy and cooked through, flipping vegetables half way through.
7. Spread pesto over wraps, layer with vegetables. Enjoy!

I am always prepared when it comes to holiday parties, friends and family gatherings, or even meal preparing for myself. I was inspired by a conversation I had with a family member about crab stuffed mushrooms. The conversation was about using the best breading to make this recipe happen. A light bulb went off in my brain. Coincidentally, I found these amazing chickpea crumbs, made only of chickpeas! How great is that? I shared my healthy find, which happens to be full of fiber, protein, and deliciousness. My family asked me to prepare a dish and bring it to Christmas dinner. I was more than happy to!
I love this hors d’oeuvre because it is loaded with important nutrients, protein, and fiber to keep you satiated for a longer amount of time, allowing you to eat and crave less throughout the rest of the day. This helps you to keep on track by making smart and healthy choices. This dish is also great as a side to your well-balanced plate.

Quinoa Stuffed Acorn Squash With Swiss Chard and White Beans

I love acorn squash. It has such a great texture and taste. Most importantly it is loaded with vitamins A, B, and C. These are important for a healthy immune system, maintains a healthy metabolism, turns carbohydrates into energy, keeps the digestive system healthy, are antioxidants which prevent free radical damage, and helps to prevent disease.
Acorn squash also has potassium,which is essential for maintaining normal blood pressure levels, and is also high in fiber to keep the gut healthy and blood sugar more stable. Roasting is my favorite way to enjoy squashes. I stuffed my squash and paired it with a side of roasted maitake mushrooms and brussels sprouts.

Cauliflower Pizza

I decided to get a little ambitious with dinner and made myself a home-made cauliflower pizza from scratch! SO tasty! I made it quite a few times, and it gets easier and better each time.
