Superfood Egg Muffins

These healthy high protein muffins are loaded with phytonutrients, vitamins, and minerals to keep the body healthy and strong. With its high protein and fiber content, it keeps you full for a longer amount of time while keeping your blood sugar stable. This is a great breakfast or snack. Take it with you on the go!

Makes 12 Muffins
Ingredients:
1 cup shredded kale
1/2 cup grated carrots
4 large mushrooms
1/2 red bell peppers
2 Tbsp hemp seeds
5 whole eggs
5 egg whites
1 Tablespoon oil

Directions:
1. Finely chop kale, mushrooms, and peppers.
2. Mix and whip all ingredients together in a large bowl, except hemp seeds.
3. Pour ingredients in muffin tin and fill 3/4 of the way.
4. Place in oven and bake for 15-20 minutes or until a little brown on edges and cooked.
5. Allow to cool.
6. Sprinkle hemp seeds.
7. Enjoy!
