I love sharing my love of eating healthy foods, baking, and cooking. It’s heart warming.

Makes 15 slices or 15 servings
97 calories per slice
4g protein, 4g fiber, 4g carbs, and less than 4g sugar

1.75 cups Pumpkin Purée
6 whole large eggs
1/2 cup coconut flour
1/4 cup almond flour
2 T coconut oil, melted
2 T vanilla extract
1.5 T maple syrup
1 T ground cinnamon
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp ground turmeric powder
1 tsp ground nutmeg
1/2 tsp ground cardamom
1/2 tsp Himalayan Pink Salt
1/4 tsp black pepper
pumpkin seeds and chopped walnuts for topping

Preheat oven to 400F
Whisk eggs.
Place all ingredients into large bowl.
Mix ingredients thoroughly.
Pour and scoop out ingredients into loaf tin.
Sprinkle nuts and seeds.
Cover with foil.
Make sure your mixture doesn’t touch the foil.
Bake for 20 minutes.
Uncover and allow to bake for another 25-30 minutes.
Keep an eye on it so it doesn’t burn. If your oven is hotter than mine, pay close attention!
Remove from oven.
Allow to cool.
Slice into 15 slices.
Serve and enjoy!
