This detox soup is Gluten-Free, Grain-Free, Dairy-Free, Nut-Free, and Vegan.
Ingredients:
4 cups low-sodium vegetable broth
4 cups water
3 Daikon (large white radish), washed and chopped
1 Sweet Potato, washed and chopped
1 bunch fresh spinach, washed
1 bunch swiss chard
1 bag frozen organic broccoli or 1 head of broccoli
2 cans rinsed organic lentils, may use dried and just boil
2 cans rinsed organic cannellini beans
2 cups mushrooms, washed
3 large carrots, washed and chopped
6 tablespoons turmeric
6 tablespoons cumin
3 tablespoons black pepper
3 tablespoons Salt
Directions:
1. Place vegetable broth and water in big pot.
2. Boil daikon for 20 minutes, or until soft.
3. Add in the rest of the ingredients.
4. Stir occasionally.
5. Allow to simmer for 30-35 minutes, or until dark leafy greens soften.
6. Allow to cool and enjoy!
