I made these really delicious Coconut Blueberry Cacao Energy Scones.
Gluten-Free, Grain-Free, Dairy-Free, Nut-Free, and Vegan
I did this all by free-hand, out on a whim.
I make my best stuff this way!
I literally threw a whole bunch of nutritionally dense ingredients together hoping it would come out to what I pictured and thought it would.
Voila!
Super low sugar!
Rich in fiber, protein, and healthy fats.
Super easy to make and lasts a long time!!
Very satiating and I only had good reviews!

Baked and brought this beauty home for Easter!
This is a carrot cake loaf. It is so delicious.
Full of wonderful and tasteful superfoods such as walnuts, coconut, and of course carrots!
This was my first time trying out cassava flour and luckily, it was an awesome experience and treat!
It is made from 100% yuca root.

Chocolate Zucchini Loaf

Wasting food is a pet peeve of mine.
I grew up in a very humble household, where we were taught to appreciate food and eat everything that was on our plate.
We weren’t aloud to leave the table until we did. I had so many zucchini’s that I needed to do something with them!
I decided to bake a GF/GF, Dairy-Free, Paleo Chocolate Zucchini Loaf.
This bread is nut-free, too! Just skip the nut topping.
Truthfully, this is one of my favorite breads I have ever baked. It is not too sweet, and it has just enough chocolate to make you smile.
I topped my slice with a scoop of coconut yogurt, a drizzle of cinnamon maca almond butter, a sprinkle of organic unsweetened shredded coconut, organic raw cacao nibs, and a few organic raspberries.

Kristen and I had so much fun baking these muffins together! We wanted to bake a muffin that was both nutritious and delicious at the same time. We thought to add some greens, just enough to nourish the body with vitamins and minerals as well as add fiber, and added banana to give it a sweet touch. It came out perfectly! Just as we imagined, but with a little more fun! Our muffins and recipes are always made with love.

Plantain Banana Peanut Butter Bread

I asked one of my friends to pick up bananas at the store so we can bake some banana bread.
She came back with about 10 plantains.
I hysterically laughed.
She honestly believed she bought bananas.
We fell to the floor laughing for about 10 minutes.
Once that was done, we questioned what the heck we were going to do with all of these plantains?!
Well, here we go!
This is where Plantain Banana Peanut Butter Bread was born!
So, just to clear the air… I haven’t prepared plantains in about 15 years!
So this was a challenge.
A challenge I was ready to take because I always LOVE a good challenge.
This bread is amazing.

Ingredients:
2 ripe plantains, yellow with black spots
2 very ripe bananas
1 cup PB2 powder
1/2 cup coconut flour
1/4 cup cassava flour
3 T melted coconut oil
2 Tbsp honey (if vegan, use maple syrup)
1 Tbsp vanilla extract
1 tsp ground cinnamon
3/4 tsp baking soda

I know many picky eater adults, and I had some of them try this recipe out.
They had no idea there were beans in it!
